Cooking oils: there are so many options to choose from. How to make the best choice?
One of the most important things to pay attention to is how stable the oil is. When we cook using high heat, it’s better to use oils that don’t oxidize quickly. When they oxidize, they form free radicals, which are not good for us. Since saturated and monounsaturated fats are more resistant to heating, that’s what you should aim for.
That’s why coconut oil is one of the best options: it’s resistant to heat, besides all of its other health benefits. Just make sure it’s virgin coconut oil.
Olive oil and avocado oil are also good choices, due to being mostly composed of monounsaturated fats.
Nut oils are delicious, but don’t use them to cook. They have delicate smoke points.
